"Like it beefy cousin, the Fredburger, Fred's brawny portabella cap comes in two sizes - large or monster - along with fresh fixins and perfectly greasy fries.  As Fred's chef Terry Chandler kidded in 2004, the last time his juicy mushroom 'wich won this category, it tastes so good because he puts "luuuuv" into it.  His secret recipe marinade may have something to do with it, too."

"Terry Chandler is a chef, but he is much more than that. The guy who runs Fred's Cafe, that weird uncle of a bar/restaurant, has turned the club into a place that serves gourmet food and great burgers - and that's only the start. He has brought out bluegrass and jazz bands and western movies nights, complemented with fishbowls of beer. Chandler's cowboy hat covers braided long hair and political conservatism (but he's more libertarian); he loves hunting and chuckwagon cooking and dropping fake mice on his customers. In this era of chain restaurants and condos, Cowtown could end up like any place else. Chandler helps keep that from happening."

"While any day of the week is fine for chilling out on the back patio of one of the most beloved ma-and-pa establishments in town, Friday eve is the best time to pay a visit. As chef Terry Chandler whips out his Texas-sized specials (don't miss the mesquite-grilled ribeye or stacked enchiladas), the makeshift stage out back hosts the straight-ahead jazz stylings of Saint Frinatra. This may be the $1.50 Lone Stars talking, but we think Friday night at Fred's is as close to heaven as most of us will ever get."
